I have checked my facts and the book and it is a conundrum... Using the CP Values from the DAFNE Carbohydrate Portion List book Weight of raw potato is X grammes. Carbohydrates = X/100 x 1.5 CP Weight of same potato baked in oven to produce Jacket potato is X-150 g Carbohydrates – (X-150)/220 x 7CP ____________________________________________________________ Applying my weights as an example, if the raw potato weighs 370g Carbs raw = 370/100 x 1.5 = 5.5CP Weight of same potato after baking is 220g So carbs for baked (jacket) potato is 220/220 x 7 = 7CP i.e. The potato after being baked contains 1.5 MORE CPs than when raw. WHERE HAVE THESE EXTRA CARBS COME FROM? Strange David Hales
